<p><span style="font-size:12pt">There have been plenty of cucumbers, okra and watermelons around here, and that means Angela has been back in the kitchen with the canner.  To the beautiful shelves of canned goods we&#8217;ve added one batch of pickled okra and one batch of low-salt pickled okra, bread and butter pickles, one batch of my great-grandmother&#8217;s 10-day sweet pickles, and a few cans of watermelon rind pickles. I also tried my hand at watermelon barbecue sauce, watermelon salsa, and a few watermelon cocktails, using the juice or pieces of frozen watermelon.  What fun!  We&#8217;ll also be featured at the Topeka Downtown Farmer&#8217;s Market on Wednesday, Sept 1, and we&#8217;ll be sharing some of our fun and interesting ways to enjoy watermelon.  We&#8217;ll be there from 10am – noon on 10<sup>th</sup> St. in front of the Capitol.  Come see us and sample!<br />

<p><span style="font-size:12pt">The chickens are loving this cooler weather, and they have ventured further and further from the coop during the day.  They obviously love the freedom of ranging our property, and it seems so evident that it is healthy and good for them.  We just love looking out the window and seeing them roving the yard.  They continue to increase egg production, and we&#8217;re up to about 14 eggs per day, most days.<br />

<p><span style="font-size:12pt">Evander starts preschool on Monday, and Nana and Grampa thought we should take advantage of this break in the weather for one last summer hurrah.  Tomorrow we&#8217;ll be taking the kids to the Omaha Zoo!  This will be a first for us, and we&#8217;re really looking forward to it.<br />

<p><span style="color:black; font-size:12pt">The hens continue to lay more eggs every day.  Even in this heat, we are up to about a dozen eggs most days.  We&#8217;re currently seeing about half brown eggs and half white eggs, but we expect this to change once all the young hens are laying.  The majority of the breeds we are raising lay brown eggs, and it just so happened that the first to start laying are the white egg variety.  Regardless of what color they are, they taste and look wonderful!  Farm fresh eggs are so much brighter in yolk color, stronger in holding their shape once cracked and taste so much better (and many studies have shown them to be more nutritious).  We&#8217;ve really enjoyed eating them ourselves and already sharing them with family and friends.<br />
</span></p>
<p><span style="color:black; font-size:12pt">The hens even have a favorite nesting box.  Of the six in the row nests that we built, the one on the far north end is by far the favorite.  We usually find at least five eggs in there at a time!  We don&#8217;t know if they wait in line for it or not, but there must be something special about it.  When they&#8217;re not laying eggs, their wandering the yard now.  We started free-ranging them as an effort to combat the intense heat.  We&#8217;d planned to all along, and we took the opportunity when nature presented it.  They stay pretty close to the coop still, mostly because they have guaranteed shade and water there.  Soon enough, they&#8217;ll be venturing all over the property, I&#8217;m sure.<br />
</span></p>
<p><span style="color:black; font-size:12pt">It&#8217;s hard to believe school is around the corner already.  We attended Evander&#8217;s preschool visitation day this morning, where we met his new teacher and saw his new classroom.  While our very cautious boy was concerned about the changes, when we arrived we discovered that there are several children from his class last year returning and he even made a new friend while we visited with the teacher.  Our little man is growing up.  Marley will start preschool in January, as she will not quite be old enough at the start of the year.  She is very excited about the idea of a new place to play and new people to play with.  We can&#8217;t wait to see how she does in such a wonderful social setting, too.<br />
</span></p>
<p><span style="color:black; font-size:12pt">We also had a nice visit with Grandma and Grandpa Millsap last night.  We had a lot of fun playing, visiting and remarking on how much the kids have grown this summer.  And we got to enjoy a cherry pie (Grandpa&#8217;s favorite) made from cherries I froze from our harvest earlier this spring.  Life is pretty good.<br />

<p><span style="font-size:12pt">We did lose one of our hens to heatstroke yesterday.  Poor thing!  There are about half a dozen hens that tend to stay in the henhouse where the temperature is even hotter than outside.  Trying to encourage them to go outside is a losing battle, so we have a fan running in there.  We also set up a mister outside, which seems to give some relief.  Interestingly, that was evidently enough incentive to draw the hens outside, too.<br />
</span></p>
<p><span style="font-size:12pt">We had a great visit to SW Kansas to see Grandma Vickie.  The kids enjoyed a lot of playing time with some older cousins, and the baby cousins seemed to appreciate having some new entertainment.  They spent quite a bit of time playing outside in the sprinkler, along with plenty of inside play to escape the heat.  We even taught them the fun of &#8220;treasure&#8221; hunts in the house, with clues written by adults.  The oldest cousin even turned it around and made a treasure hunt for Stacey.  Much fun.<br />
</span></p>
<p><span style="font-size:12pt">We&#8217;ve taken advantage of the 4-H Fair season, attending the Shawnee County Fair before we left.  Stacey even got to judge the Open Class Pie Category!  It&#8217;s a tough job, but someone&#8217;s got to do it.  While in SW Kansas, we took the kids to the Finney County and Haskell County Fairs, where they saw huge, traveling aquarium exhibit, and an exotic petting zoo.  We&#8217;ll be heading to the Douglas County Fair this weekend and down to the Osage County Fair next week, too.  The kids are both ready for 4-H, as soon as they are old enough.  Does our hearts good to see them so excited about it.<br />

<p>The chickens are laying eggs!  All of our waiting is starting to pay off.  Starting last Thursday, we&#8217;ve collected an average of 2-3 per day.  All of them are small yet, which is to be expected, except one – which was almost the size of a large egg!  When cracked open for Sunday breakfast, we discovered that it had two yolks, providing at least a partial explanation for its size.  The white leghorn hens seem to be laying the most, since they are the only hens we have that can be expected to lay white eggs.  We have started to get a few brown eggs in the last couple of days, though, so the rest of the breeds are getting in on the action, too.  Exciting!

<p>We&#8217;ll be heading out of town later this afternoon to visit southwest Kansas.  We&#8217;ll be spending some time with Grandma Vickie, along with visiting both the Haskell County Fair and the Finney County Fair.  We started packing yesterday, though Evander has been packed for a week now.  As soon as he realized that the time was getting close to head to Grandma&#8217;s he decided he needed to start packing.  For a four-year-old, he did an incredible job.  He had shirts, shorts, pajamas, socks and plenty of underwear.  And by plenty, I mean most of the contents of his underwear drawer.  At least he&#8217;s prepared!

<p>Even though we&#8217;ll be out of town, we will still have access to email and at least some access to phone, though the coverage is sometimes sketchy out that way.  If we don&#8217;t answer, leave a message and we&#8217;ll call you back on a landline phone.

<p>The summer garden vegetable harvest is finally starting!  Due to late planting, we&#8217;ve had to wait for some of our favorites parts of summer, and now that&#8217;s it&#8217;s here, we&#8217;re taking advantage of it.  Cucumbers were the first produce ready to pick, and we added them to some spring onions, then marinated them in milk, apple cider vinegar and a little sugar.  The kids call them pickles and gobble them up faster than the cucumber vine is producing them.  Since then, we&#8217;ve also enjoyed the first few green beans and okra, along with finishing off the last of the beets.  We&#8217;ve even been taught the secret to yummy beet greens – blanching them for two minutes in boiling water, then sautéing with onions and garlic.  The kids enjoyed them, too, albeit topped with a homemade dressing of mayonnaise and herbs.

<p>Our fall broccoli seedlings are doing extremely well, thanks to a lot of pampering.  We just re-potted them in bigger, individual pots.  So far, we have a total of 32 broccoli plants that we&#8217;ll transplant into the garden in another couple of weeks.  We spent some time in the hot sun yesterday (sometimes you just do the work when you have the time, and yesterday that happened to be at 2:00 in the afternoon – talk about hot and sticky!) and put together some row covers.  These will provide some shady relief for the cool-weather plants that we&#8217;re starting for fall harvest.  We may get this fall gardening thing figured out yet!
</p>
<p>Evander got his first pair of roller skates, along with protective knee and elbow pads and a good helmet.  They are built for young ones, with the outside of the boot almost covering the wheels, providing greater stability.  He gave them a try the first day, and once he decided it was alright to let go of Nana and Grampa&#8217;s hands, he did pretty well on them!  Marley is a tad jealous, though she handled it very well.  She promptly told me that she was &#8220;not four&#8221; and therefore couldn&#8217;t use the skates yet.  She&#8217;s learned several similar lessons recently, and I&#8217;m pretty sure that is what has prompted her learning to hold up the appropriate number of fingers to share such information.
</p>
<p>We&#8217;ve made time for family fun the last couple of weeks as well.  We&#8217;ve included a few pictures below of time fishing, and of our visit the dino exhibit in Kansas City,
</p>
<p>Magic Meals will be at the YMCA Baby Fair again this weekend.  This is a great opportunity to come visit with us, especially if you or someone you know is having or has recently had a baby.  There will be all sorts of businesses and services represented, and all of them are there to make the transition to family life easier for baby and parents.  If you&#8217;ve never met us and would like to, come on down!  We&#8217;ll be at the South West YMCA (on 37<sup>th</sup> St between Fairlawn and Wanamaker) this Saturday, July 24, from 9am to 1pm.  We&#8217;ll be having a drawing for a New Baby Meal Deal.  Hope to see you there!

Stacey has constructed a frame for the tomatoes that consists of strings attached to a tall cross-pole and then anchored into the ground.  The tomatoes can vine up the strings, giving them shape and direction without the bulk of tomato cages.  We&#8217;ve used the strategy before with success, so we&#8217;re excited to watch the progress this year.<br />

<p><span style="color:black; font-size:12pt">Keeping cool with the kids takes a little more work (and a little more play!)  We&#8217;ve been to the Shawnee North Family Aquatic Center, which is amazing!  It&#8217;s like a small water park, with slides and float rides and tons of fun.  We also spent some time at the lake over the weekend, forcing Angela and Stacey to slow down and not work all the time.  For workaholics like us (though we tend to prefer the terms &#8220;busy&#8221; and &#8220;productive&#8221;) it has taken a serious commitment to spend a little time away every few weeks.  It&#8217;s been very good for us, and the kids enjoy the time away from home and with more of our undivided attention.<br />
</span></p>
<p><span style="color:black; font-size:12pt">We also recently visited the Waldorf School in Lawrence.  A group of interested families from Topeka arranged a visitation, and Monika Eichler (one of the founders of the school) gave us a fun and informational &#8220;day in the life&#8221; peek at how the school works.  The school focuses on a very natural, holistic approach to learning, taking each child&#8217;s individual needs and rhythms into consideration, along consideration for the need for order, socialization, and care for the earth.  While we&#8217;d love to have the school as an option for our children, we&#8217;re afraid the distance makes it unlikely.  We did take some new perspective away from the visit, though, and highly recommend checking it out, for those in the Lawrence area.<br />
</span></p>
<p><span style="color:black; font-size:12pt">We apologize for the lack of pictures last week and this week.  Our camera is in need of a professional cleaning, and taking it in just hasn&#8217;t been high on our priority list.  Please trust that soon you&#8217;ll see pictures of the kids&#8217; new favorite pastimes – wearing clothing on their heads as costumes and putting on puppet shows.<br />

<p>The apricot harvest is finally finished!  I have to say, I&#8217;m grateful.  The preservation effort was a lot of work, but I have a full shelf in my canning pantry of beautiful orange jars, just waiting for their many uses in the coming year.  One of them will be this week – Apricot Chicken!  As we wait for the peaches to ripen (our next major fruit harvest), I have time to get back in my sadly overlooked vegetable garden.  It has definitely taken a back seat to the cherries and apricots, though I have managed to get in and mulch, so the weeds haven&#8217;t overtaken everything.  We&#8217;re still pulling beets, carrots and onions, though the salad greens and sugar snaps have succumbed to the July heat.  Due to late spring planting, we don&#8217;t have corn, okra, or green beans yet, though it shouldn&#8217;t be long.  We did pick our first cucumber today, with a second only a couple of days from being ready.  And the tomatoes and peppers are healthy, but it will be some time before we have much to harvest from them.
</p>
<p>Hard to believe, but it&#8217;s actually time to start the fall garden!  I&#8217;m going to give fall gardening another try this year, having learned a few lessons last season.  I&#8217;ve started broccoli for transplanting and put in some more green beans, and I&#8217;ll be direct-seeding beets and carrots for storing in the root cellar.  I also plan to plant kale and mustard greens, which should keep in the garden well into cold weather, and I&#8217;m considering some cabbage and more salad greens.  Getting seeds to germinate in hot Kansas summers is difficult, so I&#8217;m going to try to be much more diligent about regular, gentle watering.  Stacey is helping me fashion a row cover of thin, white fabric, to supply some shade for these cool-weather plants.  And I&#8217;ll continue to mulch, which helps to keep the soil moist and avoid large temperature changes, both hot and cool.  Hopefully these efforts will be enough to get some fall vegetables!
</p>
<p>Marley is growing up.  She has successfully transitioned to the &#8220;big girl&#8221; toddler bed.  She&#8217;s so excited to be able to get in and out by herself!  She can get her own drink and take herself to the potty when she needs to.  And most of the time, she even goes back to bed afterwards.  We haven&#8217;t had much trouble with her new-found freedom, and we&#8217;re tickled that she is so proud of herself.

<p>Apricot harvest continues in full swing this week, though we are finally starting to see the end of our huge tree&#8217;s productivity.  When you look at the tree, you can finally see more green leaves than the beautiful sunny orange of its fruit.  Last week&#8217;s meals for clients included a yummy Baked Apricot Dessert!  We&#8217;ve continued preserving with more batches of jam, apricot salsa, apricots in syrup, fruit roll-ups, dehydrating and even another batch of wine – this time without a lot of the modern niceties that help ensure a successful, clear product.  We&#8217;ll see if we can wing it the way they used to.  Progress reports will appear in a few months.  With all of these efforts combined, we&#8217;ve put up so much that we&#8217;ve gone through a whopping 30 pounds of sugar.  It boggles the mind, especially for this low-sugar mama, but it humbles me to think about the necessity of sugar in such instances and how life would be different if sugar weren&#8217;t prevalent in our foods except when we put it there, as we&#8217;ve been doing this week.

<p>As I&#8217;ve spent so much time recently picking, washing, peeling, chopping, simmering, canning, drying, and all, I&#8217;ve had quite a bit of time for reflection.  Why do I do this?  It&#8217;s much cheaper to run to the store and buy a jar of apricot preserves for $2.  When you figure in my time and labor, along with supplies like sugar, pectin, and new lids or even jars, does this effort really make sense?  Why do I stay up until all hours of the night, bleary-eyed, stirring a pot of bubbling apricots and sugar, in order to put it in jars and have it on my shelf?  It would be easier to let someone else do the work and spend my money (that I&#8217;ve spent my time earning) on someone else&#8217;s labor.  Or would it?
</p>
<p>I do it because my mama did it.  And her mama before her.  And hers before that.  Is it necessary for my family&#8217;s subsistence like it may have been for theirs?  Not directly, but in my daydreams, I picture a time when it could be.  We live in such a centralized, compartmentalized world, that the idea of creating an end food product for ourselves and our families from absolute scratch seems like a waste of time to some.  But there is a connection for me that I cannot shake, no matter how tired I am or how orange my fingers are from processing apricots.  I am connected to my own food supply and not dependent on a faceless corporation.  I am connected to my family history.  I am connected to my own family, friends and clients who share in our creations and appreciate it for what it is.  And at the end of the day, I am proud of myself.  I have created something out of the beautiful bounty we have been provided, and I have made it into something that will keep until cold winter days make the mornings spent picking apricots seem like a distant memory.
</p>
<p>Will making jam out of apricots keep my family alive through a winter?  No.  But will it teach lessons to me and my children?  Will it remind us that we are capable of providing for ourselves?  Will it help us be that much closer to sustainability?  Will it make us healthier?  Will it stoke my fire to learn new ways of preserving and remind me to continue learning and trying new things?  Absolutely.  And I feel that much more blessed for the experience.
</p>

<p><span style="font-size:12pt">Apricot harvest is definitely in full swing at the Davis house.  Every morning, we head out with the kids and pick up apricots and then again most evenings.  Our 40-foot tree has produced a ridiculous amount of fruit, and we&#8217;re working hard to preserve as much as we can.  At that height we don&#8217;t actually pick much off the tree.  We&#8217;ve set up netting under the tree to catch the apricots (or at least slow their fall) and then we pick them up from there.  Every day we pick up at least 1-2 grocery bags full of fruit.  The tree doesn&#8217;t fruit every year, as it needs just the right conditions, but when it does, it keeps us busy.  Looking at the tree from a distance, the amount of color from the sheer volume of fruit is a little overwhelming!<br />

<li>You will receive confirmation of your order (if placed by email) within 48 hours.

<li>Once confirmed, we&#8217;ll plan your cook day and contact you around Wednesday to schedule your delivery time (normally Thursday or Friday).

<li>Payment can be made at the time of the delivery by check, cash, or money order.   We can accept credit cards, but prefer not to as it costs us to process those cards.  If you need to pay via credit card, please email us for details.

<p><span style="font-size:12pt">So far, we have Apricot Jam, Apricot Orange Walnut Conserve, Apricots in Syrup, Apricot Jelly, and Dried Apricots.  In addition to more of each of these, we plan on freezing some and drying some in sheets.  These are known as &#8220;leathers&#8221; but are more recognizable to most of us as fruit roll-ups.  We processed some of the cherries this way, and they are a huge hit with Evander and Marley.  If done correctly and stored in a cool, dry place, they are also supposed to last up to 2 years.  I doubt they&#8217;d ever make that long in our house, so we may never know!<br />
</span></p>
<p><span style="font-size:12pt">We also have a batch of Apricot Wine started.  Home-brewing is a process that takes at least 6 months, so we won&#8217;t know much about how that one works out for a while.  Stacey has brewed both wine and beer in the past, and it&#8217;s something we have wanted to return to for a while.  With small children, we just hadn&#8217;t made the time until now.  Wish us luck!<br />

<p><span style="font-size:12pt">We are also finding the time to relax and enjoy the summer.  We spent some time at the lake last weekend.  Water-skiing has always been a favorite family pass-time in Angela&#8217;s family, and we recently inherited Grandma and Grandpa Millsap&#8217;s skis.  While the kiddos were hanging out with Nana and Grandpa, we gave them a whirl and found out the pontoon boat is able to pull a skier!  It&#8217;s a bit slower than the ski boat, obviously, but worked just fine and Angela is ecstatic to know that she can continue skiing regularly.  Grandpa Millsap was pretty thrilled to know that the skis are going to continue to provide fun, too.  Soon we&#8217;ll be teaching the kids to ski!  We also got to fish at Papa Harry&#8217;s pond, and both kids caught several fish.  (Mama and Daddy did, too!)<br />
</span></p>
<p><span style="font-size:12pt">The pool has become the new favorite activity of both the children.  They both have rings that they float in, and they&#8217;re both working on kicking their feet and paddling with their hands.  Neither is terribly interested in going under water, though we&#8217;re pretty sure Marley will be the first to brave it.  Once she gives it a go, it&#8217;s a pretty good bet Evander will follow.<br />
